Recipe: Fruity Green Smoothie

It’s no secret that I am a bit of a health nerd, and have been trying to add more and more vegetables into my diet lately. I could eat fruit and drink smoothies until the cows come home (at which point, being vegetarian, I would give them a pat on the head and assure them they weren’t my next meal) but vegetables have always been more of an obstacle for me. I’m much, much better than I was (I actually eat brocolli these days!) but any way to eat more greens isĀ a bonus.

I decided to make a green smoothie as part of my lunch today, but wanted to give it a bit of a fruity twist. Here’s what I did!

  • Large handful of spinach
  • Large handful of curly kale
  • Small carrot (chopped up)
  • 7/8 chunks of watermelon
  • Water/pure fruit juice/almond milk

How it’s done…

Pop all of the ingredients into your blender. I recently bought the Nutribullet and it is beyond AMAZING! In less powerful blenders you may struggle to blend things like the carrot, so if you’re serious about smoothies it’s definitely worth investing in something like a Nutribullet.

I also added some Innocent fruit juice – I would normally never add fruit juice into a smoothie (I just use water, or occasionally unsweetened almond milk) but I wanted to add an extra element of fruity sweetness to this concoction. I trust Innocent as it is 100% pure juice, not from concentrate.

I then gave it a good whizz and made sure all of the large chunks of carrot were totally blended. It took no time at all, and was ready to serve out! I bought this adorable little jam jar at a household store at the weekend, and my smoothie mixture fit perfectly into it – meant to be!

As for the taste? It was seriously delicious – if you’re a bit wary of green smoothies, adding a little fruit into the mix definitely helps them to go down easier. I’ve got such a sweet tooth that a bit of natural sugar improves pretty much anything for me, and it was certainly the case for this recipe. I loved it!
